Preheat oven to 400. Line a cookie sheet with parchment paper.
Scrub sweet potato, then using 2 mm food processor blade, slice the potato.
Toss in olive oil, then spread evenly onto cookie sheet. Sprinkle with coarse sea salt. Bake for 11 minutes, then flip chips and return to oven. Second side should only take a few minutes. As soon as edges start to brown, remove from oven.
