You don’t need to be from the South to enjoy this tangy classic southern dip.
Pimento Cheese
- 16 ounces extra sharp cheddar cheese (shredded)
- 4 ounces pimento (chopped)
- 1/4 cup mayonnaise
- 1/2 teaspoon pepper
- 1/8 teaspoon salt

Add all ingredients except mayonnaise to mixing bowl. Mix on low speed until blended.

Add mayonnaise and mix on medium speed for one minute.

To make this spreadable for sandwiches, add an additional two teaspoons mayonnaise.

Refrigerate, but remove from fridge about 30 minutes before using. Serve with crackers, celery sticks, or as a sandwich spread or burger topping.
