These Irish Oat Crackers are substantial and go perfectly with a variety of Kerrygold cheeses: Dubliner, Skellig and Swiss (left to right).
Oat Crackers and Irish Cheeses
- 8 tablespoons butter (unsalted)
- 1 cup rolled oats
- 3 tablespoons whole wheat flour
- 1/2 teaspoon coarse sea salt
- 1 teaspoon dried thyme
- 1/3 cup pecans (finely chopped)
- 1 egg (beaten)
- 1/4 cup sesame seeds

Preheat oven to 350F. Pour sesame seeds into a shallow bowl and set aside.

Add butter, oats and flour to a bowl and mix. Stir in salt, thyme, pecans and egg.

Roll walnut-sized pieces of dough into a ball, then roll in sesame seeds. Place on baking sheets. Use a glass dipped in water to flatten the crackers.

Bake for 15 minutes, until golden.

Serve with a selection of Irish cheeses.
