Cherry Oat Bars

These Michigan cherry oat bars are perfect with coffee for breakfast or with ice cream for dessert.

Michigan Cherry Oat Bars

  • 1 ¼ cups flour
  • 1 ½ cups quick oats
  • ½ cup rolled oats
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup butter (room temperature)
  • 1 cup cherry filling see below

Cherry Filling

  • 2 cups fresh cherries (stems removed and seeded)
  • 1/3 cup sugar
  • 3-4 tablespoons cornstarch
  • juice from one lemon
  1. Mix cherries, sugar, lemon juice and corn starch in a small saucepan.  Bring to a boil and cook for 10 minutes, or until mixture thickens.  Remove from heat and let stand at room temperature until cool.  Cover and refrigerate.

  2. Preheat oven to 350°.   Spray a 9×9 inch square pan and line with parchment paper.

  3. Combine dry ingredients in a large bowl.  Add butter and use a pastry cutter to blend ingredients into crumbly mixture.  Press 2/3 of the mixture into the pan and press down.  Top with cherry filling. Add the rest of the crumb mixture to the top.

  4. Bake for 30-35 minutes. Top should be golden brown.  Cool bars before cutting.  Store at room temp or in the fridge.
