Washington Apple Spice Cake
- 3 large eggs
- 1-1/2 cups sugar
- 3/4 cup vegetable oil
- 2 cups all-purpose flour
- 1-1/2 tablespoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 Braeburn apples (peeled, cored, and sliced)
- 1/2 cup chopped nuts
- whipped cream or ice cream (optional)

Heat oven to 325 degrees F.

Beat eggs, sugar, and oil in mixer. Add flour, cinnamon, baking soda, and salt. Mix until combined. Fold in apples and nuts.

Grease an 8-inch square baking pan. Pour batter into pan and bake 65-70 minutes. Serve warm, topped with whipped cream or ice cream.
