Broiled Parmesan and Swiss Tomatoes

You’ll want to pop these cheesy toasted tomatoes in your mouth immediately!

Broiled Parmesan and Swiss Tomatoes

  • 1 package cherry tomatoes (halved)
  • 4 tablespoons butter (softened)
  • 4 green onions (chopped)
  • 3 tablespoons dry bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/4 cup shredded Swiss cheese
  1. Place tomatoes, cut side up, onto a cooling rack on a sheet pan. Broil 4 in. from heat 4-6 minutes.

  2. Add butter and onions to microwave-safe bowl. Heat, uncovered, on high 2 minutes or until onions are tender.  Mix in bread crumbs, Parmesan cheese, salt and garlic powder. Spoon over tomatoes. Top with Swiss cheese. Broil 1-2 minutes.

  3. Eat immediately, these taste best while still warm..

The original recipe called for just two tomatoes split in half.  We used one package  (11 ounces) of Robinio cherry tomatoes.  So the tomatoes don’t roll around, you might want to slice a small sliver off the bottom to flatten the bottom.
