Peanut Pie
- 3 eggs
- 1 cup sugar
- 1/2 cup flour
- 1 1/2 cups light corn syrup
- 1 1/2 tablespoons unsalted butter (melted)
- 1/2 pound salted Virginia peanuts
- 1 pie crust (deep dish, frozen)
Preheat oven to 325.
Stir eggs until thoroughly mixed. Add sugar and flour to eggs. Stir. Add corn syrup, peanuts and melted butter. Pour mixture into pie crust.
Bake for 55-65 minutes, until center of pie is firm to touch.
