Oat Crackers and Irish Cheeses

These Irish Oat Crackers are substantial and go perfectly with a variety of Kerrygold cheeses: Dubliner, Skellig and Swiss (left to right).

Oat Crackers and Irish Cheeses

  • 8 tablespoons butter (unsalted)
  • 1 cup rolled oats
  • 3 tablespoons whole wheat flour
  • 1/2 teaspoon coarse sea salt
  • 1 teaspoon dried thyme
  • 1/3 cup pecans (finely chopped)
  • 1 egg (beaten)
  • 1/4 cup sesame seeds
  1. Preheat oven to 350F.  Pour sesame seeds into a shallow bowl and set aside.

  2. Add butter, oats and flour to a bowl and mix.  Stir in salt, thyme, pecans and egg.  

  3. Roll walnut-sized pieces of dough into a ball, then roll in sesame seeds.  Place on baking sheets.  Use a glass dipped in water to flatten the crackers. 

  4. Bake for 15 minutes, until golden.

  5. Serve with a selection of Irish cheeses.
